Christmas is fast approaching and it is known to be a season of love. It is also a season to share with loved ones. I remember when I was a kid, every Christmas, my mother would wake up so early to prepare different variety of food for Christmas. After preparing them, she would dish them into ceramic plates, add some drinks to them and give them to my siblings and me to go give to our neighbors. We would joyfully hop into our neighbors' houses to deliver the package containing food and scream "Merry Christmas".

When I was a kid, I used to think that the sole reason for Christmas was to eat until I got satisfied. To me, a well-spent Christmas is one in which I had a lot of food to eat and a lot of drinks to drink. But as I grew older, I realized that Christmas was not just about the food alone but good food makes a good celebration. Christmas is a festive season designed to celebrate the birth of Jesus Christ and food is a constituent of celebration.

 

In this article, I present to you two delicious foods you could prepare this Christmas season as a Nigerian:

1. Smoky party jollof rice + Fried Turkey/Chicken +Salad: This is the most common food combination for Christmas and it is so amazing. A smoky party jollof rice combined with grilled or fried meat and salad makes it a perfect combo for a perfect Christmas. 


How Do You Achieve A Smoky Party Jollof Rice Taste?

To achieve a smoky party jollof rice taste, you must make use of the right ingredients or let's say recipe. What makes a jollof rice taste smoky is covering the rice with foil, reducing the heat source, and cooking it with little water. Also adding some butter when the water has dried up gives it a delicious taste. Other ingredients that can make your rice taste so yummy include white pepper and chicken broth. 


How Do You Prepare A Vegetable Salad?

Here is the recipe I use in preparing my vegetable salad:

1. 1 large cabbage
2. Some carrots
3. 1 cucumber
4. 2 boiled eggs
5. Some sweet corn
6. 2 medium-sized tomatoes
7. Salad cream /mayonnaise (for dressing)

Preparing salad is so easy.

Simply wash all your vegetables thoroughly under cold running water. After washing, slice the cabbage and keep it in a bowl. Alternatively, add the sliced carrot as you add the cabbage. The cabbage and the carrot should be in a ratio of 2:1. Add some sweet corn and stir gently. Then slice the boiled eggs, tomatoes, and cucumber into the salad. Dress the salad in either a salad cream or mayonnaise and keep it in the fridge to cool for a while before serving.

2. Fried Rice + Grilled Peppered Chicken + Salad: This is another yummy food combination to try out this Christmas. Fried rice is a food eaten by Nigerians mostly on special occasions and Christmas shouldn't be left out. Fried rice involves parboiling some rice, preparing the fried vegetable sauce, and finally mixing the whole thing together. Don't forget to spice up your fried rice by adding some ginger powder, garlic powder, chicken stock, and some curry powder to give an amazing look. 

 

Here is how to make Peppered Grilled Chicken:

Wash and rinse the chicken very well. Transfer into a pot and season with diced onions, curry, thyme, bullion cubes, salt, and pepper. When it is boiled and a little bit tender, grill and set aside. Get another pot and prepare a sauce consisting of pepper, tomatoes, onions, ginger, seasoning, curry, thyme, and tomato puree. After preparing the sauce, add the grilled chicken, combine and make sure every bit of the chicken is covered with the sauce. Leave in the sauce on low to medium heat for five minutes. In other enable the sauce to penetrate deep into the chicken, you can poke some holes into the chicken with a toothpick. Your grilled chicken is ready I will be devoured!

Then slice the boiled eggs and cucumber and add to the salad. Dress the salad using either a salad cream or mayonnaise and keep it in the fridge to cool for a while before serving.
