Low-calorie soup for weight loss

Vegetable soup is very useful especially on cold days, to warm up and stimulate the body. The recipe below is a guide to making a very tasty, flavourful, and simple Vegetable soup. This will not exceed forty-five (45) minutes.

 

Ingredients

1. 2 tablespoons chopped spring onion or plain onion.

2. 1/3 cup of chopped carrots.

3. 2 tablespoons minced garlic.

4. 1/3 cup of chopped green cabbage.

5. 1/3 cup sweet corn kernels.

6. 2 tablespoons white cornstarch.

7. 1/3 cup of chopped French beans.

8. 1/2 tablespoons butter or oil.

9. 2 1/2 cups of water.

10. Salt is optional.

 

Procedures

— Chop all the vegetables into small pieces (that is; carrot, cabbage, etc.)

— Add 2 tablespoons of cornstarch (corn -flour) to a small bowl.

— Add 3 tablespoons of water and mix well.

— Put 1/2 tablespoon oil or butter in a large heavy-bottomed pot over low or medium heat.

— Add chopped onion and garlic.

— Stir for 1-2 mins.

— Add carrot, cabbage, sweet corn kernels, french beans, and salt. The salt is for the vegetables only.

— Stir the mixture, and cook for 4-5 mins.

— Add 2 1/2 cups of water. Stir again, and boil the mixture.

— Add black pepper powder.

— Add (cornstarch + water ) mixture, stir continuously for 1-2mins. This is done to prevent lump formation.

Considering the fact that cornstarch and water mixture, will be understandably thick, one should ensure that the stirring is done well, so as not to ruin the soups with too many lumps.

— Stir and cook until the mix turns thick, and has no fresh or raw smell of cornstarch.

In other to achieve this, the cornstarch and water mixture should be cooked for 7-8 mins.

— Add vinegar, and mix well.

—Taste the soup, to confirm whether the level of seasoning is satisfactory. Add more seasoning, if required.

— Reduce or kill the heat.

— Allow to cool for a while and serve.
